I was readying some news in the blog of Ivan Musoni, owner of the restaurant Ca’ Vegia in Salice Terme, and I found one that made me happy to be Italian. It is the kind of news that the entire Italian cuisine supporters should be happy for and that should be read by all the foreigners that still believe that a good Pasta Carbonara must drown in the cream. Have you ever been advice to have a dinner in an “Italian Restaurant” and find out that nothing you have ordered tasted as what you had during your last trip in Italy? What make great the Italian cuisine are the right ingredients and the love each cook use to handle and mix them.

So, who better than a group of Italian cuisine and wine professionals, who have done of the Italian cuisine their job, becoming also spokesmen all around the world, could dictate a list of rules so that a “Ristorante Italiano” abroad can be really called Ristorante Italiano? Honestly I believe no one else.
